Tomato & Bocconcini Pizza with Pesto

Preheat oven to 220C.

Place the base onto a baking tray lined with baking paper or foil. Spread over the pesto then sprinkle with combined mozzarella and parmesan. Top with sliced tomato and Bocconcini.

Bake for 10–12 minutes until heated through and the cheese is golden.

Remove from the oven and sprinkle with chopped parsley and garnish with spinach leaves. Serve immediately.

Bazaar Tips

For a tasty alternative, replace Bocconcini with ricotta.

1 heaped tblsp pesto

1/4 cup mozzarella cheese

1/4 cup parmesan cheese, grated

4 roma tomatoes, sliced

6 balls Boconccini cheese, sliced

1 tblsp parsley, chopped

Baby spinach leaves to garnish
