Mexican Fajita

Heat oil in a large saucepan add onion and garlic and cook until soft and transparent. Add mince and sprinkle with taco seasoning and cook until browned.
Add beans and taco sauce, heat gently for a minute or two. Place lettuce, tomatoes, mince mixture and grated cheese in the centre of the top half of the tortilla. Fold the bottom half up and then fold over the sides. Secure with a skewer and serve with a touch of sour cream

1 onion, chopped
1 garlic clove, crushed
500g mince 
½ cup kidney beans
6 Tbsp taco sauce
Lettuce, shredded
2 tomatoes, diced 
1 cup cheese, grated 
1½ Tbsp taco seasoning
oil for frying
sour cream
